How To Light The Old Country Gravity Fed Smoker

There are two methods to light this Old Country gravity smoker: direct and indirect.

Indirect Method

Here’s how to light the Old Country Gravity Fed Smoker indirectly:

1. Fill half of the charcoal chimney with charcoal briquettes and wait until they are covered with gray ash.

2. Fill the chute halfway with lit charcoal, add the rest of the unlit charcoal on top, and close the hopper lid.

When you put unlit charcoal in, remember to have the temperature regulator and smoke stack wide open to let air move through

3. When you have a fire going, add wood chunks to the firebox area. The hot charcoal will fall through the charcoal grate and land on your wood, igniting it and adding flavor to the meat.

A good rule of thumb is that each piece of wood can last around half an hour.

4. Then, gradually close down the smoke stack and ball valve to adjust airflow until the temperature goes down to your desired cooking temp.

Direct Method

I learned this method from a YouTuber called The World of Barbeque, which works very well.
Using this method, you don’t have to empty the remaining charcoal from the last cook before lighting the smoker.

1.Fill the chimney with unlit charcoal, then place a piece of tin foil on top. As the fire burns, this will protect your grill’s gasket from heat damage.

2. Place one or two chunks of wood in the center of your firebox, then place a piece of firestarter on top.


3. Make sure those firestarters are tall enough so that when ignited, their flames can reach the charcoal above in the chute

4. Light the fire starter.


Remember to leave the top of the chute wide open when the fire beneath is burning.
